Healthy Convenience Food

I'd like to stock up on healthy, convenient food to eat during a flare. I am often too tired to make a salad or prepare even steamed vegetables from scratch. Also, I live very far from a store where I could buy frozen veggies. I am not looking for advice about diets. What I'm looking for is suggestions for food to keep on the shelf that is easy to prepare, not loaded with fat and salt, tastes good, and is nutritious. This might not be the answer you're looking for. But when I'm making food I try to make a ton so we have lots of left overs that just have to be reheated or frozen easily and I put them in little containers in the freezer that can just be reheated. maybe on a good day you could prepare aome freezer friendly food I that you just have to reheat ?
My health right now is good enough to be fairly active and cook. But still I find at the beginning of the week I will prepare my meat (and eggs like you ;) cook up a starch and also clean and chop some veggies and throw them in a bag without dressing and keep those things in the fridge so it makes it also easier for myself to put some meals together for lunches and dinner. If I didn't my hubby would be eating fast food or no food so this is how I've been able to keep our house hold eating health and for a reasonable cost. I do understand that cooking for one can have it's challenges though. It's always easier to make something good and healthy for someone else. We tend to neglect ourselves. But having a prep day and then relaxing and enjoying the benefits during the week I think could certainly help you out if you are able.

When I don't want to take time to prepare a meal, I throw some frozen berries microwaved to thaw a bit, with a cup of Greek yogurt, about 1/2 to 3/4 cup granola, raisins, and a small handful of your favorite nut. Mix and enjoy. Takes less than 5 minutes. Hop this helps. For snacks, I've put crunchy peanut butter on whole wheat crackers, cheese and crackers, and fruit of various kinds. Coffee is always a pick me up because of fatigue, and now they say it's good for you. I also try to keep hydrated with water. That's simple. I hadn't eaten much suger for awhile then yesterday ate a huge chocolate chip cookie and today had a flare. I have no idea if the two events were related, but I'm not trying that again.

@ivyw--I live about 35 miles from a supermarket. I do order a lot of food from Bob's Red Mil (grains & beans & such) and have that delivered via post, though. I'm looking into other mail options.

Cocanina--yes, this is great advice. I'm having a bad patch right now where I am too fatigued to do all that food preparation. In general, though, I think your plan is an excellent one. The pressure cooker helps a lot with main dishes. I was thinking along the lines of buying healthy convenience food to have on hand for when I don't have anything prepared and am too tired to make anything. I find at those times that I just grab whatever is handy and I'd like to plan it so the first thing I grab is actually a healthy choice.

Hi moonpowered. I thought of the question you posed after I tried some thing new today. If you don't like Indian food then it doesn't help you much. But he ompany may amkebe other types foods, I avnt hecked. I like Palak peneer which is basically cooked spinach with some other veggies and spices and some firm chunks of Pender which is a firm Indian cheese. Anyways I found a convenience version of it at the store the other day. All you do is heat it up and it tastes just like what I am used to it tasting and theI ingredients are very good. They also have chana masala which is a chickpea and spices mixture. I was impressed with the taste and ingredients and it comes in a very thick plastic bag that you just cut and microwave. I think one should be able to order it online. The name of the company is Taj Mahal flavor of India. The website on the back is www.everland.ca but it says it's made in India for everland natural foods. It was about 3.00 canadian

Thanks mkathryn! That yogurt trick is one I use, too. I also enjoy peanut butter on graham crackers (although there is the sugar to consider). So sorry about your flare today. Hope you feel better soon!
