I have a hard time eating enough protein for my weight. I’m eating plenty of fiber and veggies but I don’t eat much meat anymore. Do you think I need to change anything?

Also don't forget about some nuts like low sodium pistachios. They have protein. I prefer the kind that are already shelled.

I think what's important to some people when they eat meat is to get the bone marrow because bone marrow is very good for you
So I don't necessarily think it's the meat because they're usually full of hormones unless you go out of your way to buy grass-fed hormone free meat but bone marrow is extremely good for you. My father used to always say that was his favorite part.
