Does Anyone Use Any Of The Delivery Meal Kits/ready-made Meals?

I want to change my eating lifestyle to pescatarian, low-carb. My family is a meat-eating family and I don't want to make them change theirs unless they want to. But, I can't make 2 different meals. I plan on meal prepping for myself but I would also like to already have some stuff in my freezer for when I can't do my own. Has anyone used any of those like Hello Fresh? Or, if you find stuff at your local stores, what do you get? What stores? I know we all have different stores but I'dā€¦ read more

Hi Pam, I am following a Mediterranean diet which is very pescatarian friendly! Due to budget constraints, I shop primarily at what's called a grocery outlet. What's available varies from week to week, but I can usually count on staples. I can give you some ideas of what works for me. I'm not a skilled cook and honestly, I'm not that "into" cooking. I have to eat gluten free so my choices reflect that. šŸŒ±

I buy, for example, quinoa, oats, sweet potatoes, leafy greens and other vegetables and herbs that are in season and look good. I buy frozen salmon, chicken breasts or tofu or tempeh, and low fat or fat free plain greek yogurt, and eggs, nuts, and seeds, legumes, beans. Next, frozen berries and any fresh fruit such as citrus currently in season. šŸŠ

From this I can make:
Breakfasts: quick oatmeal with hemp seeds and berries, or yogurt bowls, or a vegetable omelette.
Lunches: can be super easy quinoa + veggies + protein + topping/sauce such as olive oil & lemon & parsley. Fruit.
Snack: fruit, nuts, whole grain crackers with nut butter.
Dinners: Similar to lunch just varying the protein and flavors and carbohydrate, such as sweet potatoes tossed in olive oil and roasted. Fruit.

I take lots of shortcuts like I'll make a lot of quinoa and freeze it. Roast or steam broccoli and then I'll have that for the next few meals. šŸ„¦

I drink herbal teas, water, not too much caffeinated teas/coffee, and I'm trying to reduce sugar such as the gluten free cookies or cakes I bake for my daughter lol.
