P.S. 😅I should have added that those two examples are for when I'm extremely low energy and it's a high pain day... when I need to feed myself and don't want to just make a bowl of cereal. Not that there's anything wrong with that!🥣
I really like to make bowls with whatever looks good at the store, whatever is in season. I know that is vague but it could be a base of quinoa, some chickpeas, grilled veggies, lemon and parsley.

I also do a rice bowl similar to Anne, but I add fresh pico de gallo, avocado, vegan cheese and plant based sour cream. It's fast and easy on those days when I dont have a ton of energy for cooking. In the summer I also like tuna pasta with lemon juice, olive oil, fresh tomatoes and onion, and a few seasonings. It's light and lasts me for several days. For a quick and easy summer side, you can't go wrong with cucumbers and onions marinated in vinegar.

A shelf stable packet of microwaveable brown rice, a can of black beans, a dollop of salsa: quick, low effort and filling.

Tin of salmon over some vegetables (chopped up cucumber for example) and a piece of fruit: pretty simple and quick.
