I think eating Fruits and vegetables is a good thing. Im not a fish or seafood eater.
I've been on a no salt diet since 1968. My mother oversalted everything. When I started cooking for myself I didn't put salt in anything unless it was required for a chemical reaction. I put salt in the water when I boil eggs in case of one cracking. It causes the white to coagulate and seal the shell.
The difference you might be feeling is a lowering of blood pressure.
It varies from person to person. In my case a severely upset digestive system. It got so bad that I developed an extremely itchy rash on my arms.
You can test for it by avoiding gluten for 2 weeks, then having a small amount for several days and comparing how you feel. Be aware that many things have gluten in them. Read labels carefully.

From my experience, I react with aches and fatigue, or even swelling on my face, hands, and feet (flare up) the next few minutes or the next day(s) when I eat anything with monosodium glutamate or MSG, gluten, tomatoes, eggplant, artificial sugar, and even white rice.
