I have found buying chicken breast on sale and then simmering in chicken broth for about an hour gives me some nice tender white meat that can be used in many ways. I use my deep pasta pot 6 breast to a quart carton of stock. Sliced chicken w/stuffing, sweet and sour chicken, chicken salad, chicken in spaghetti sauce w ziti. Add some prepackaged salad and some a bag of mico-waved steamed vegetables.
We also do potatoes or sweet potatoes in the mico wave.

I push through it, today I am having multiple mini dystonia storms but I am forcing my body to do the cooking and making sure we have something decent to eat (also using our pressure cooker to make sure it cooks at a decent amount of time).

I refuse to give into my inability to hold a fork, or stand and cook (I'll use a chair or other assistive aid to be at the stove to cook if needed) I have found many adaptive devices to help me do what I need - might not like using them, but if it helps make everything and it works then so be it.

Let’s just say Thank You for crock pots and Instant Pots. On my good days, I make extra to throw in freezer in the case of bad days. I too love to cook for the family around the holidays. So I cheat a little with some courses made ahead and freeze. It’s ok to me and my family! I only do as much as I can and am NOT sorry for doing more. Hope this helps you! You are awesome! Think about you and how blessed you are to be with your family around the holidays!

Understood! I’ve cooked for people like that and then separate the pot and add my spices. Because I love SPICY FOOD(ginger, garlic and hot spices). My family doesn’t so once it gets to a certain level I separate the food and toss my likes inside. That way it wasn’t extra work for me. I totally get where you’re coming from though. I’ve just decided I’m the one with the chronic illness and I’m not settling! If you don’t like how I’m cooking then cook your own food!

I love the one pot meals. I mostly do those and also baking dishes. Then I place some in the freezer in little bowls. So, I only need to microwave the dish after it defrosts. Keep lots of cereal and good old peanut butter and jelly. I’ll sometimes place the peanut butter and jelly sandwich in the waffle maker. So, I can have the toasted bread I want.
