Do you have any recipe/menu ideas to make healthy evening meals easier by doing some prep on the weekend?
We really try to eat healthy, but you know how great it is to find energy at night. We want to have 3 recipes that we do prep/some cooking for on Sunday, to make some easy meals during week.
My slow cooker is my best friend, I make soups, casseroles (i'm veggie) but also slow cook joints of meat for my husband. If I have steamed veg left over from a sunday dinner I add 3 eggs and a tub of cottage cheese, pour over the top of the veg in a shallow flan dish and bake in the oven approx 200oC about 40mins, add cheese to top and a sprinkle of mixed herbs about half way through baking. Its like a quiche without the pastry, sounds disgusting but trust me its really tasty hot or cold. xx
That's my game plan as well!!! I fix meals, enough on the weekend, that I can reheat when I come home from work feeling really wiped out. It helps so much!!! I know eating the same thing every night might not sound so great but I also have a few easy, quick fix meals that I can substitute in if I want something different. I also connected with a company that sells Vegan Protein powder and mixing them with fruits is a super quick meal and keeps me feeling great - can never get enough of them!!!
I try to shop and have things that I can cook in a slow cooker. That way I can start it in the morning and have a healthy meal at night. I'm also diabetic and this helps me plan my meals.
